Simple and Refreshing Vegetarian Corn Salad Recipe

This is a simple, refreshing and tasty recipe for corn salad.You can have it as a light meal or a healthy brunch or snack, and it is often served cold or at room temperature. It’s Brimming with nutritious goodness and a flavourful way to get your veggie intake.

There are many different variations of corn salad, and the ingredients can vary widely depending on the recipe. Corn salad is usually dressed with a simple vinaigrette or any other type of dressing. The dressing is usually mixed with the corn salad ingredients and then chilled before serving.

INGREDIENTS

  • 2 cups of fresh corn kernels (cut from the cob or thawed from frozen)
  • 1 cup of cherry tomatoes halved, or 1 medium sized tomato sliced
  • 1/2 cup of diced red onion
  • 1/2 cup of diced cucumber
  • 1 tablespoon chopped coriander leaves(cilantro) or 1 tablespoon chopped parsley
  • 1 to 2 tablespoons of fresh lime juice, add as per taste
  • 2 tablespoons of olive oil (Optional)
  • 1/2 teaspoon of roasted cumin powder
  • 1/2 chili powder or cayenne pepper or black pepper
  • 1/2 teaspoon of salt,add as per taste

DIRECTIONS

  1. First steam or boil fresh 2 medium corn cobs till the kernels are tender. You can steam them in a pressure cooker, steamer or Instant pot or electric cooker.
  2. Let the corn cobs become warm or cool down. Then carefully scrape off the corn kernels with a knife.
  3. Add the corn kernels in a mixing bowl.
  4. Add chopped onion, cucumber,tomato and chopped coriander or chopped parsley.
  5. Sprinkle 1/2 tsp red chili powder or cayenne pepper or black pepper and 1/2 tsp roasted cumin powder.
  6. Now add lemon juice. Add lemon juice as per your taste preferences.
  7. If you want you can add extra virgin olive oil too.
  8. Serve corn salad immediately. Or you can chill in the fridge and serve later.
