Simple Olive Salad Recipe

INGREDIENTS

  • 3 Medium Cucumbers (seeded and cut in chunks), peeled
  • To season Sea salt (you can use normal salt too)
  • 1 Lemon (juiced)
  • A pinch of Sugar
  • 8-9 large Spanish olives
  • 1 1/2 tbsp Olive oil
  • To season Black pepper (cracked)
  • For garnishing Mint leaves
  • 6-8 Cherry tomatoes

DIRECTIONS

  1. Put the chunks of cucumber in a bowl with sea salt, pinch of sugar and lime juice.
  2. In a blender add the pitted black olives, olive oil and cracked black pepper.
  3. Blend this into a nice puree.
  4. Add halved cherry tomatoes to the cucumbers and mix with the black olive puree.
  5. Garnish with mint and chopped olives.


Olive salad is a flavorful and nutritious option that is rich in healthy fats and antioxidants. It is easy to prepare and can be customized to your liking by using a mixture of different types of olives and adding in other vegetables or ingredients.
